Refined in China: The 'queen' of freshwater fish

      Sayram Lake, the largest and highest alpine lake in northwest China's Xinjiang Uygur Autonomous Region, is popularly known as the "last teardrop of the Atlantic." Recent improvements to the local environment have turned the lake into a haven for wildlife and spawned an industry one would not naturally associate with landlocked Xinjiang – fisheries. In fact, Sayram Lake is the sole source in China of northern whitefish, known as the "queen" of freshwater fish. Northern whitefish are mainly sold in high-end restaurants.
